Fungi – a cornmeal porridge flavored with okra and thyme (Check out Kim’s Restaurant in town, be sure to order it with a piece of steamed fish)
Rice & Peas – a pilaf prepared with herbs, seasonings and pigeon peas (Visit Chicken Shack or known by locals as “Dutty Chicken for this delicacy)
Johnny Cakes – made for the journey, this fried bread dough was made by locals to take them on their travels (Visit Chicken Shack for this too – make sure you get it hot right off the oil!)
Pate΄-Johnny cake dough filled with spiced beef, salt fish, chicken, conch, or vegetables (Visit Rosa’s booth in Whim for the best Pate on island)
Conch in Butter Sauce – stew conch with onions and peppers in a buttery sauce flavored with thyme (Visit Centeno’s – do not forget to add some local hot sauce for spice)
Kallaloo – local soup prepared traditionally with greens, okra, eggplant, and seafood/meat. (Visit the Kallaloo man on Saturday’s by Basin Triangle for this tasty green dish)
Saltfish – Used widely on all islands, a salt preserved cod fried or soaked and marinated for salads (Visit Kim’s Restaurant in town, be sure to order it with Dumplings)
Roti – from the island of Trinidad, this dish consists of an Indian potato curry filled with either conch, chicken, beef shrimp, or vegetables and served wrapped in a traditional chickpea flat bread (Visit E & D on Saturday’s or Flavors of the Caribbean for this yummy meal)
